Power issues - 12 MP Sync stereo hat with a Raspberry Pi Zero2

We are using the 12 MP Sync stereo hat with a Raspberry Pi Zero2 - purchased from ScorpionVision in the UK. The application is a deployable underwater camera system.

The camera works fine, when an HDMI and USB hub is connected, but as soon as disconnected it fails to run - without any errors logged, it just seems to stall. I assumed that this was due to power and that the HDMI and USB hub must be providing a little extra, to the LiPo batteries we are using.

Has anybody run into this issue before and/or have a feel for the power draw of this hat? I have tried boosting power and adding a PiJuice to manage both a LiPo and charging from cells, but nothing seems to get it working reliably when not connected to a user.
