Details about the image formats for Arducam Mega Camera (JPG, YUV)

I have spent several hours with the documentation, but could not find any details about the different image formats.

JPG - What compression is used? Is it possible to somehow set the jpeg-quality?
YUV - which particular format of YUV is produced by the camera?
